This recipe as-is makes 4 cups of soup. If you want a larger batch to freeze later, double the recipe and freeze half (after it completely cools). Make sure to label the container or bag with the recipe name and date.

Ingredients List:

  • 2 cans of light coconut milk
  • One large chicken breast, cut into bite size pieces
  • 3 green onions, finely chopped
  • 3 – 4 Thai chiles, finely chopped (can substitute serrano chiles)
  • 4 tablespoons freshly squeezed lime juice
  • 2 tablespoons fish sauce
  • Cilantro to garnish
  • Optional – If you can find lemongrass stalks, it can de added into the pot with the chicken for a more authentic Thai taste.

Cooking Instructions:

  1. In a large pot, bring both cans of coconut milk to boil.
  2. Add chicken and cook for 4 minutes. You do not want to overcook, because the chicken will get tough and too chewy.
  3. Stir in the sliced green onions and chilis and cook for another 30 seconds.
  4. Remove pot from heat. Stir in the lime juice and and fish sauce.
  5. Serve in individual bowls with cilantro garnish.
